The aroma of these two dishes cooking is a surefire way to sooth and supply a good dose of comfort to you and your whole family. Additionally, creating this dish with a younger family member will enhance the atmosphere of tradition.

Nostalgic Lasagna and Crusty Rolls by Carole Morris

STRESS-FREE CRUSTY ROLLS
Ingredients needed:
1-teaspoon salt
4-teaspoons of brown sugar
11/4 cups (warm water)
1 package of quick rising active yeast
3 ½ cups bread flour
1 egg white and 1 tablespoon of water
2 tablespoons of corn meal

Mix together in mixer (with dough hook)
1-teaspoon salt
4-teaspoons of brown sugar
11/4 cups (warm water)
1 package of quick rising active yeast

Slowly mix in…
3 ½ cups bread flour

Mix for about 5 minutes
Then…Place dough on a lightly floured surface and divide into 18 portions. Roll each portion into a ball and place onto a greased cookie sheet. Sprinkle each roll with cornmeal and let rise in a warm place until double (about 45 minutes)

Next… in a small bowl, beat 1 egg white and 1 tbsp. of water
Brush egg mixture over each roll.
Bake at 375 degrees for 15 minutes
Brush rolls again with egg white mixture
Bake for an additional 10 minutes until golden brown

NOSTALIGIC LASAGNA

Ingredients needed:
11/2 pounds of ground beef
1-cup onion (chopped)
2 cloves of garlic (minced)
1 tsp of salt
2 tablespoons of Italian Seasoning
2 71/2 ounce cans of chopped tomatoes (labeled Italian seasoned)
2 6-ounce cans of tomato paste
2 beaten eggs
24 ounces of cottage cheese (small curd)
1 tsp of pepper
1 tablespoon of parsley flakes
1-cup parmesan cheese
1 large box of lasagna noodles (12-15 noodles)
1 1/2 lbs. of mozzarella cheese
For a savory meat sauce brown together…
11/2 pounds of ground beef
1-cup onion (chopped)
2 cloves of garlic (minced)
1 tsp of salt
2 tablespoons of Italian Seasoning
Stir in,
2 71/2 ounce cans of chopped tomatoes (labeled Italian seasoned)
2 6-ounce cans of tomato paste
Simmer ingredients for ½ hour…

In bowl, mix following ingredients together for filling…
2 beaten eggs
24 ounces of cottage cheese (small curd)
1 tsp of pepper
1 tablespoon of parsley flakes
½-cup parmesan cheese
Cook according to package directions…
1 large box of lasagna noodles (12-15 noodles) and then drain

Spray a 13x 9” baking pan with non-stick cooking spray
In pan, layer half of the noodles. Then, spread half of the cheese filling on top of the noodles. Next, spread half of the meat mixture on top of the cheese filling, and sprinkle with ½ of the mozzarella. Repeat the layers, and then sprinkle remaining parmesan cheese on top of the last layer of mozzarella. Bake at 375° for 35 minutes
